We were asked to remove an old steel frame and glass extract canopy and to replace it with a new stainless steel canopy with a gas interlock system and incoming air through the front of the canopy grills along with a new Rational and new Servery.

We also needed to install a new gas line under the canopy at 700mm high to comply with current regulations. New electrics were run to all the fans.The removal of the old system and the installation of the new went very smoothly without any problems arising.

Free Chefs training was provided with the new Rational.
